Comforting Carrot Soup

Don’t you just love fall! It’s the season of comfy sweaters and scarves, warm tea and crisp apples, chilly air and strong sun. And soup! Here’s a bright and cheery recipe that will warm you from the inside out and protect you from autumn’s only down side – germs!





Comforting Carrot Soup

1 tbsp olive oil
1 large yellow onion
5 garlic cloves
1 1/2 inch piece of fresh ginger
1 tbsp cumin
1 tsp cinnamon
1/2 tsp allspice (or nutmeg)
2 pounds carrots, roughly chopped
4 cups vegetable or chicken stock
2 tbsp lemon juice
salt & pepper to taste
up to 1 cup coconut milk (optional)
parsley or cilantro for garnish
yogurt for garnish

Saute onion. Add spices, garlic and ginger and cook 2-3 minutes. Add carrots, stir to coat. Add broth, cover and simmer 30 minutes or until carrots have softened. Remove from heat and carefully blend until smooth. Stir in coconut milk (if using), lemon juice and salt & pepper. Add a dollop of yogurt and sprinkle of parsley or cilantro. Serve in your favourite bowl. Revel in the comfort!
