Leftover Luncheon

1044947_10100519459032541_1087084734_nIt was so outrageously hot the other day that my pal and I decided to camp out in my apartment under the fan all day long. With all the chatting and reminiscing we worked up quite an appetite.  So I explored my fridge and came up with a few simple dishes. The result was a feast fit for kings queens that was fun, affordable and super delicious! Here are a few ideas that I hope will inspire you to cook and share. Cheers to kindred spirits and picnics on the floor!

Herby Cucumber Salad
Cucumber, peeled or un-peeled and cut into bite size chunks
Handful of fresh herbs chopped (basil, thyme, oregano, chives etc) OR use the dried herbs you’ve got on hand
Squeeze of lemon/lime or splash of vinegar (white, sherry, red wine)
Sea salt + freshly ground black pepper (optional)
Drizzle of olive oil (optional)

Light and refreshing this is a great dish for hot days.

Fennel, Cucumber and Green Pepper Salad
Fennel, cucumber and green pepper sliced as finely as possible
Squeeze of lime
Pinch of sea salt
Fennel fronds

This dish can be kept in the fridge for a few days – it just gets better! Use as an appetizer, snack or base for grilled fish and meats.

Asian Green Beans and Broccoli
String beans and/or broccoli, steamed
Drizzle of toasted sesame oil
Drizzle of tamari or soy sauce

This dish is wonderful hot or cold. It’s a great way to use up leftover greens!
