Summer Simplicity – Sauteed Swiss Chard, Zucchini and Peas

Imagine: you wake up, the sun is shining, the sky is blue and the air is cool. You walk out to the garden and seeing brightly stemmed swiss chard, golden zucchinis and a tangle of pea pods you think mmm…breakfast! Grabbing your scissors you gather up your produce and make your way to the kitchen. Doesn’t that sound ideal? It sure does to me! And it happened! If only it could happen every morning…

Regardless of where you are finding your produce this summer it’s likely fresh and from Ontario soil. Enjoy this fact! Embrace it and showcase it in your cooking. Here’s a simple breakfast (or lunch or dinner!) that is bound to keep you smiling.

Summer Breakfast Sauté

1 bunch swiss chard, de stemmed and coarsely chopped
1 yellow (or green) zucchini, cut in rounds (the smaller the zucchini, the sweeter the flavour)
1 handful peas, shelled
1 tbsp olive oil (a glug)
Sea salt + freshly ground black pepper

Over medium heat sauté vegetables in olive oil. Cook and toss for a few minutes so that chard wilts, zucchini gets some colour and peas are tender. Transfer to 2 plates and season with salt and pepper. Top with a poached egg or 1/2 an avocado. Add slice of toast or a wrap and you’re golden!
