Simple Tomato Sauce

Homegrown tomatoes are unbeatable in flavour. We have so many this year I had to make sauce!  Start by washing/sorting your toms. Chop tomatoes into reasonably sized chunks (no need to peel). Let them drain in a colander for 20 minutes to get rid of excess water (less boiling later). Saute onions and garlic in a few tbsp olive oil. Add basil, oregano, and thyme. Throw in tomatoes and let simmer for 40 minutes or more (depending on how watery your sauce is – the idea is to get it concentrated). Season with salt and pepper. Add a dash of balsamic and a tiny bit of maple syrup if you like. I did today and to be honest I don’t think I needed to. Fresh tomatoes don’t need much help. Et voila! Simple sauce. Chuck it in the freezer and relive summer on a cold winter’s night.
