Gluten and Dairy Free Peanut Better Cookies

Yes I wrote “Better” instead of “Butter” on purpose! Peanut butter is one of my biggest weaknesses when it comes to food.  There is something so comforting about melty PB on toast or oatmeal, or on a banana, or a spoon…! Everything is better with peanut butter! Admittedly it’s not the best snack. Yes, it has protein, but peanuts are a source of Arachidonic acid which is pro-inflammatory. Nonetheless, I allow myself to sin occasionally. I now buy natural peanut butter to avoid the hydrogenated oil and other additives. I’ve really come to love almond butter, pumpkin seed butter and a whole list of alternatives but these tend to be much more expensive so when it comes to baking I sacrifice a little on the health front for the sake of my budget.  Here’s my latest adapted recipe. These cookies were a hit even with my gluten loving friends so they must be good!

Gluten and Dairy Free Peanut Butter Cookies

1/2 c brown rice flour
1/2 c quinoa flour
1/2 tsp baking soda
1 egg
1/2 c brown sugar (or more if you like)
1/4 c rice or almond milk
1 c peanut butter
sploosh of vanilla extract
chocolate chips (the more the better if you ask me!)
