Eggs Florentine…sort of

I can’t remember how I came upon this recipe but the first time I tried it I was reminded of eggs Florentine (my old brunch favourite back in the glory days of gluten and dairy!) It makes a nice dinner too.

Quinoa with Spinach

Sautee in a pot:
Extra Virgin Olive Oil
1 shallot
2 green onions
4 cloves garlic

Add and Cook with lid on for 15-20 min:
1 c white quinoa
1 2/3 -3/4 c water

Add a bunch of spinach (chopped) and stir until it wilts. Salt and pepper are a must! Poach an egg and add ham or bacon if you like.  Haven’t come up with a sauce yet but it’s nice without.
